  • Master the “Dashi” Dilemma

    The biggest hurdle for any vegan in Japan is Dashi (fish stock). It is in almost every soup, sauce, and seasoning. When eating out, always ask:

    “Dashi ni sakana wa haitte imasu ka?” (Is there fish in the stock?) Many traditional places now offer Kombu Dashi (seaweed stock) if you ask in advance!
